SIMPLE TOFU SCRAMBLE RECIPE

Simple Tofu Scramble: a flavorful, high-protein, plant-based substitute for scrambled eggs. It only takes 8 ingredients to prepare!

A few years ago, I would have thought you were crazy if you had told me that I preferred to eat a tofu scramble over an egg one. How could I possibly want to eat so much soy for breakfast? Ack.

Alright, pals, times have evolved. My perspective on soy has changed over time. I eat it more often than I used to, even if I don’t always eat it at every meal and occasionally not every day.

This is due to my discovery that certain studies claiming a connection between phytoestrogens and cancer are merely untrue. Consuming soy has actually been demonstrated to lower the risk of cancer.

My opinions on consuming animal products have also altered over the past few months, as you may have already seen. Since we recently made the switch to a plant-based diet and stopped eating eggs and dairy, I haven’t posted any recipes that call for them.

I’ve become so knowledgeable about the harm that animal agriculture causes to the environment, the animals, and ourselves that I can no longer stand it.

Although I understand that may seem restricted to the typical individual, that isn’t how I see it. I think our society is the one thing that limits the plant-based diet. Although I won’t go into a lengthy discussion about it on my blog, humans are hardwired to believe that they require animal protein to exist.

However, a number of individuals have demonstrated that this is not the case. A plant-based diet is not only feasible, but it can even help you thrive. Eating this manner has never made me feel better physically or mentally.

I leaped at the chance to receive a copy of America’s Test Kitchen’s newest book, Vegan For Everyone, when they asked to send one.

If you’re not acquainted with ATK, they are renowned for investing the time to investigate several approaches to preparation and execution in order to guarantee that they are creating the top recipes conceivable.

Each of their books is filled with mouthwatering, tried-and-true recipes and advice to help you become an authority on that particular cuisine.

Though I’ve eaten tofu scrambles many times at restaurants, I’ve never attempted preparing them at home, so I figured their recipe would be a great place to start. It only requires a few basic ingredients and can be prepared in less than ten minutes. breakfast to my taste.

Using soft tofu that has been crumbled into large pieces between 1/4 and 1/2 inch in size and let to dry on a baking sheet covered with a dish towel is the key to achieving an egg-like texture.

Even though I had to use firm tofu because I couldn’t find soft tofu, it still turned out fantastic. It has the perfect amount of flavor from the shallot, red pepper, basil, and salt, and a light yellow hue from the turmeric that makes it look like scrambled eggs.

I strongly suggest reading Vegan For Everyone if you’re interested in eating more plant-based meals, regardless of whether you’re a vegetarian, vegan, or omnivore. This fantastic book demonstrates that you don’t have to use animal products to prepare mouthwatering dishes that will satisfy any palate!

SIMPLE TOFU SCRAMBLE RECIPE

SIMPLE TOFU SCRAMBLE

Ingredients

  • 14 ounces of drained and patted dry soft tofu
  • 1 and 1/2 teaspoons of oil
  • 1 tiny red bell pepper, stemmed, seeded, and cut finely
  • 1 finely chopped shallot
  • 3/4 teaspoon of salt
  • 1/8 teaspoon of turmeric
  • 1/8 teaspoon of pepper
  • 2 teaspoons of fresh basil, cut finely.

Instructions

  • Tea towels or paper towels should be used to cover a baking sheet. Crumble the tofu into pieces that range from 1/4 to 1/2 inch. After 20 minutes of draining, gently press with paper towels.
  • Heat the oil in a big skillet over medium heat. Add the shallot and bell pepper, and simmer for about 5 minutes, or until softened. Add the crumbled tofu and season with salt, pepper, and turmeric. Cook for 3–5 minutes, or until tofu is heated through. Take off the heat, sprinkle with fresh basil, and serve hot.
  • Firm tofu—not extremely firm—will also work if you can't get soft tofu; just be cautious not to crumble it too finely.
