Ingredients

  • 14 ounces of drained and patted dry soft tofu
  • 1 and 1/2 teaspoons of oil
  • 1 tiny red bell pepper, stemmed, seeded, and cut finely
  • 1 finely chopped shallot
  • 3/4 teaspoon of salt
  • 1/8 teaspoon of turmeric
  • 1/8 teaspoon of pepper
  • 2 teaspoons of fresh basil, cut finely.

Instructions

  • Tea towels or paper towels should be used to cover a baking sheet. Crumble the tofu into pieces that range from 1/4 to 1/2 inch. After 20 minutes of draining, gently press with paper towels.
  • Heat the oil in a big skillet over medium heat. Add the shallot and bell pepper, and simmer for about 5 minutes, or until softened. Add the crumbled tofu and season with salt, pepper, and turmeric. Cook for 3–5 minutes, or until tofu is heated through. Take off the heat, sprinkle with fresh basil, and serve hot.
  • Firm tofu—not extremely firm—will also work if you can't get soft tofu; just be cautious not to crumble it too finely.
